Removes the custom "docs" output directory in favor of the default "doc" directory to avoid warnings when publishing to hexdocs. SECURITY.md was missing from the ex_doc extras section. Add generated `doc` directory to `.gitignore`. Signed-off-by: Winford <winford@object.stream>
